Scottish Level Cooking

I cooked a simple, quick meal tonight. While I cooked, DJ and I snacked on pistachios and cucumbers. For the main course, we had par boiled long string beans, served with a touch of butter and salt, and broiled beef tip steak with a mushroom-sherry-cream sauce. Quick-high protein-tasty.

DJ complained that he did not like the mushroom sauces I had made in the past. I told him he was insane, that they were really tasty.
Here's the How-to:
Since I broiled the meat and there was no pan to deglaze, you basically sauté mushrooms in butter till soft. Crack some pepper over it, add some strong beef broth, cream and sherry. Let that cook down, and then add a bit of cornstarch in cold water to thicken. Once it thickens, take off heat and add another tab of butter, of course proportions are everything. If you need a better description on quantities, just ask.

A few bites into the meal, DJ said, "This is the best steak and mushroom sauce ever! You are now at the Tam O'Shanter level."

The Tam 'Shanter ,for those of you who need enlightening, is an old Scottish restaurant, whose specialty is prime rib. If you have a fetish for women dressed in plaid, this is the place for you. It has an old-world feel to it and can give the impression of a dive, but don't let that fool you, the food [meat] is excellent.

Which makes DJ's comment, a compliment. It's not like, "Hey mom, now your at Denny's level" Which makes what he said funny, because this is coming from DJ, a kid in his early 10's. You would have to know him to understand this- imagine Bobby Hill, from King of the Hill The way they observe the world and their comments therein are similar. Hmmm... does that make me Peggy and BRKVW Hank?
